    Lupin beans 1kg. Sweet lupin beans are a fantastic source of protein with up to 35% protein content. This year we have grown our lupins at Trollebergsvägen. The lupin bean may be one of the most interesting foods available right now. Good for the soil because lupin also "fertilizes" the soil and for us who eat it because it is a vegetable protein, hence a climate smart food choice.

    Organic Värpinge "Puy-type" Lentils 1kg. French delicacy lentils of the "Puy-type", KRAV. Only lentils grown in the French region of Le Puy may be called "Puy lentils". Our lentils are of the same variety but grown in Värpinge. Puy lentils are generally considered to be the world's tastiest lentils. Fantastic taste, texture and at the same time a high quality vegetable protein source. Soak overnight/day in the refrigerator, rinse thoroughly and then boil quickly for about 1-2 minutes in lightly salted water. Wonderful added warm to a salad.

    Please note: We co-cultivate with emmer wheat and the bag may therefore contain individual emmer wheat kernels.

    Organic Deli-knäcke with caraway. We make thin delicious crackers with sourdough, lentils, rye flour, emmer flour, spelt flour, salt and caraway. Wonderful with a little butter or why not with various delicious cheeses.

    Sourdough bread/Nybakat surdegsbröd KRAV, approx 1.4 kg. Freshly baked sourdough bread KRAV on our own grain from our small farm bakery; about 40% ground whole grain emmervete, about 40% stone ground sifted spelt and about 20% coarsely stone ground whole grain spring rye. The dough is left to rise for several days and the breads are therefore incredibly tasty. Contains flour, salt and water. We only bake to order!

    Organic coarse rye flour, whole grain stone milled (Stenmalt rågmjöl KRAV) bag of 1,7 kg. Pesticide free - Milled roughly on our stone mill in Värpinge. Super good to start/feed sourdough with!

    Organic spring Rye, whole kernels (Helkärna vår-råg KRAV) bag of 1,7 kg. Pesticide free - WHOLE KERNELS rye, for you who want whole grains to eat soaked, cooked, roasted or to bake or grind yourself.

    Organic naked Barley (Nakenkorn KRAV, hela kärnor), bag of 1,7 kg. Nakenkorn is often called "the rice of the north" and is a local nutritious substitute for imported rice. Significantly more climate friendly! Soak the night before, rinse thoroughly and cook much like rice. Organic barley flour, finely ground (Kornmjöl KRAV, virvelmald). Barley is the cereal with the lowest glycemic index and is perfect for mixing in when baking bread, making e.g. thin bread/knäckebröd and for porridge.

    Very finely ground emmer wheat flour (Virvelmalt Emmervetemjöl KRAV, fullkorn), bag of 1,7 kg. Behaves almost like sifted white flour but is wholemeal. Emmervete (farro in Italian) is a an incredibly tasty old so-called wheat variety with more minerals and much "kinder" gluten. Unfortunately, buckets must be peeled before grinding and also give a very low yield, which affects the price. Emmer has a high protein content and is very rare. Feel free to try making pancakes / waffles on the flour; make the batter the night before.

    Pesticide free Emmer wheat whole kernels (Emmervete, hela kärnor), bag of 1,7 kg. Called Farro in Italian. Can be used as cooking wheat but has a completely different and slightly nuttier taste. High protein content of about 17%. We co-cultivate with lentils, which are sometimes difficult to sort out. May also contain occasional unshelled emmer seeds, which should be removed.

    Organic Dala wheat flour (Dala lantvetemjöl KRAV), bag of 1,7 kg. There are a number of different local, old and unusual wheat varieties of spring wheat, which give a fairly low harvest but a fantastic flour. Tasty, mineral-rich, high in protein and a strong gluten, which gives airy bread. Dalavete is the earliest of them all but also gives the lowest yield and best baking properties, especially through our special vortex grinding.

    Very finely ground organic rye flour (Virvelmalt rågmjöl KRAV), bag of 1,7 kg. Extra high protein content.

    Hel Svedjeråg KRAV, bag of 1,7 kg. A very rare type of rye. Produces a low yield but great taste. It is sown in midsummer and harvested the following year.

    Whole Einkorn Wheat (Hel Enkornsvete KRAV), bag of 1,7 kg. Einkorn is the most original of all wheat. Produces a very low yield but a wonderful flour. Grind it yourself or use it as food wheat.

    Einkorn wheat flour, extra fine whirl ground KRAV (Enkornsvetemjöl, extra fint virvelmalt), bag of 1,7 kg. Feel the wings of history; bake on the most original wheat. Originated in Mesopotamia about 10,000 years ago

    Whole Dalavete KRAV (Hel Dalavete) , ), bag of 1,7 kg. For those who want to grind their own flour.

    Organic "fiber-manna" spelt wheat (höst spelt "fiber-manna" KRAV), bag of 1,7 kg. Tasty fibrous "manna" that goes well with eg semolina porridge. Soak with milk the night before, boil and then dilute to the desired consistency.

    Organic very finely ground spring spelt (Virvelmald Vårspelt KRAV), bag of 1,7 kg. The unusual spring variety (sown in the spring) of spelt gives a much lower yield but higher protein (about 15%) and generally higher quality. Should be mixed with other flours.

    Organic spring spelt, whole kernels (Hel kärna Vårspelt KRAV), bag of 1,7 kg. For those who want whole kernels or grind them themselves.

    Organic caraway (Kummin KRAV) 1 jar (aprox.120g). Swedish organic caraway is very rare. Most of it comes from e.g. Egypt/India. We grew our caraway at Trollebergsvägen between Värpinge village and Lund. A fantastic spice for e.g. bread, knäckebröd, cheese, goulash soup, boiled potatoes, rösti and as a liquor spice.

    Yellow sweet clover seeds (Gul Sötväppling, pollinatörsutsäde KRAV). Yellow sweet clover (Melilotus officinalis) is a fantastic pollinator friendly plant that gives a lot of high quality pollen and nectar the second year when flowering. If you want to support wild bees and bumblebees, sow a little here and there. 1 kg is enough for about 500-1000 sqm. NOTE: NOT for eating! Only to seed/plant.

    Flax seeds (linfrön) (500g, 1kg, +)

    Canola seeds (rapsfrö) (500g, 1kg, +). Taste very good if roasted a little in a pan without oil. Perfect to be sprinkled over salads or muesli, mixed with butter or cream cheese and then spread on bread, as a garnish for salty pastries, or even as ingredient for pesto. Contain high amounts of vitamin A and E and Omega 3 and 6.

Lupin Beans Hummus

Soak the lupin beans for a couple of days, changing the water daily to remove bitterness and soften them for faster cooking. Why bother with this extra step when canned beans are fast and easy? In addition to being organically and locally grown by Fagraslätt, the lupin or lupini bean, a yellow legume from the genus Lupinus, is not widely available in Sweden. These unusual beans are high in protein but have a comparatively low carb count. Try this delicious low carb hummus. It’s worth the extra effort of starting with local, dried beans!

Ingredients:

2 cups cooked lupin beans

1 clove of garlic

1/2 tsp of salt

1/4 cup of olive oil

1/3 cup of tahini

The juice of one lemon

A few ice cubes for smoother texture

Ground cumin, coriander or cayenne pepper to garnish

Instructions:

1. Strain the cooked lupini beans, reserving some of the cooking water in case a thinner hummus is desired.

2. Peel and chop the clove of garlic.

3. Juice the lemon. Use only ½ the juice initially, adding more to taste.

4. Add the ingredients to the blender or food processor and puree until smooth. A

few ice cubes blended with the mixture makes for a smoother texture.

5. Add a little more olive oil or some of the reserved cooking water to thin the mix.

6. Sample the mixture and adjust lemon, salt and tahini to taste.

7. Garnish with spices and a swirl of oil or use as a sandwich spread.

8. Enjoy approximately 9g of protein and 6g net carbohydrate per serving!

Heart-Shaped Waffles

Ingredients:

2 eggs

50 g caster sugar

250 ml milk 

250 g wheat flour

2 tsp. teaspoon baking powder (11g)

1 tsp vanilla sugar1

pinch of salt

75 g melted unsalted butter

Instructions:

1- Mix well the eggs and sugar. Then add the milk. Mix

2- Add the flour, baking powder, vanilla sugar and salt. Mix well. 

3- Add the melted butter and mix again. Let rest for 30 mn/1h if possible.

4- Heat your waffle iron. Spread some batter. Let it cook for about 3 minutes (or whatever your waffle iron says!) until the waffles are golden brown and cooked all the way through. Repeat until you are out of batter.

5- Enjoy with your favourite topping: some jam, honey, whipped cream, nutella or just icing sugar.

Quinoa and red lentils curry

Ingredients:

80 g white onion

2 cloves garlic

200 g fresh tomatoes or canned chopped tomatoes

30 g olive oil

5 to 10 g curry powder

100 g quinoa

100 g coral lentils

300 g water

A pinch of cumin seeds

½ - 1 tsp. salt, to be adjusted according to taste

Instructions:

1- Chop onions and garlic then put them in a bowl.

2- Chop tomatoes or canned chopped tomatoes. Add to the bowl. Add curry powder and mix.

3- Heat olive oil in the pan. Add the tomatoes mix and cook for 5mn.

4- Rinse the quinoa and coral lentils under cold water, then add them to the pan.

5- Add water, cumin seeds, and salt and cook for 12 min. Mix often.

6- Serve hot.
